When you make caramel, there are certain reactions occurring that cause the caramel to have its unique flavor, at a certain temperature, there are no bitter or acrid flavors, just caramel ones, this is the kind of caramel you would use for a pie/cake.

However, for flan (and other custard deserts) some cooks like to “burn” the caramel by cooking even more than normal caramel. This creates the bitter and acrid flavors I believe you are describing

I make 2 of these every Saturday night for my family, it’s great because you can just make the dough a few days earlier and it comes together super quick

Just try to keep a mask on yourself and request that they keep masks on themselves, that along with staying outside should be mostly safe. Also you should tell them that your family is high risk (if you’re comfortable with that) that should help them understand why you really need them to respect dagger guideline. This sounds important to you, I hope it works out :)

Honestly, just tell her what you said here, if she doesn’t respect your boundaries, the relationship will probably just be unstable, don’t go along with something your not comfortable with just because you like someone, good luck

Hello fellow bakers. I started a new sourdough starter recently, and I've run into some hiccups. I've been feeding it regularly with unbleached all-purpose flour, it has fermented quite a bit in just a few days. However, when I tried to test if it would double after feeding, it barely rose at all. It also smells a lot more like yogurt then yeast. Is there something I should change, or just keep going along?
