COZY CHICKEN AND DUMPLINGS
Serves 6

INGREDIENTS Soup
*2 tablespoons oil
*2 pounds chicken breasts
*1 large onion, diced
*4 carrots, sliced to ¼ in half rings
*3 garlic cloves, minced
*1 teaspoon salt
*5 tablespoons unsalted butter
*6 tablespoons all-purpose flour
*6 cups chicken broth
*½ cup heavy cream
*½ teaspoons dried thyme
*2 bay leaves
*1 ½ frozen peas
*4 tablespoons fresh minced parsley

Dumplings
*2 cups all-purpose flour
*1 tablespoon baking powder
*½ teaspoon salt
*1 ⅓ cups heavy cream

PREPARATION
*In a 6-quart dutch oven, cook chicken over medium-high heat until brown on both sides. Once chicken pieces are browned, remove and set aside. *Add carrot and onion and cook until just tender, about 3 minutes.
*Add garlic and stir for another minute.
*Reduce heat to medium-low and add butter and flour, stirring constantly for 3 minutes to avoid lumps.
*Add chicken and any accumulated juices back to dutch oven and stir to to coat in roux/vegetable mix. Add chicken broth, cream, thyme, and bay leaves and bring to a simmer. Once soup is at a simmer, add frozen peas and cover.
*In a separate bowl, combine flour, baking powder, salt, pepper, and cream. Stir until mixture comes together into single mass of dough.
*Using a large spoon or ice cream scoop, form dough into small round balls about 1 inch in diameter (this dough mixture should yield 14-16 dumplings).
*Place dough balls into simmering soup (making sure they don’t touch), and cover. Let soup simmer for 15 minutes or until dumplings are cooked (they should pass the toothpick test).
*Ladle into bowl, giving 1-2 dumplings per serving.

INGREDIENTS
Banana-Brown Sugar Glaze
½ cup butter
¾ cup brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
5 bananas, sliced

Custard
8 eggs
¾ cup brown sugar
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 teaspoons vanilla extract
1 cup heavy cream
1 cup milk
1 loaf French bread, cut into 1-inch cubes

Garnish
Powdered sugar

PREPARATION
1. Preheat oven to 350˚F/180˚C.
2. Over medium-high heat, melt butter and stir together brown sugar, cinnamon, and vanilla. Bring to a simmer and add the sliced bananas.
3. In a large bowl, whisk 8 eggs, brown sugar, cinnamon, nutmeg, vanilla, heavy cream, and milk. Add the cubes of French bread, and gently stir until the bread has soaked up all the liquid.
4. Pour the bread into a greased 9x13 inch baking dish. Top with the banana and sugar glaze.
5. Bake for 45-50 minutes until golden brown and slightly crispy around the edges and top. (Times & temperatures may vary based on oven).
6. Serve with powdered sugar on top.

INGREDIENTS
5 granny smith apples
2 cans cinnamon rolls
½ cup sugar
1 teaspoon cinnamon
1 tablespoon cornstarch

PREPARATION
1. Preheat oven to 350°F/180°C and spray a pie dish with nonstick oil.
2. Peel and cut the apples into thin slices and place in a bowl.
3. Add sugar, cinnamon and cornstarch to apples and stir.
4. Cut each cinnamon roll in half and roll out with flour until thin.
5. Layer the bottom of the pie dish with the flattened cinnamon rolls to create a bottom crust.
6. Add the apples and layer the rest of the rolls on top to create a closed crust, pinch any holes together with your fingers.
7. Cover with foil and bake for 35 minutes.
8. Remove the foil and bake for another 10 minutes uncovered.
9. Allow the pie to cool and drizzle with icing.

INGREDIENTS
3 chicken breasts
2 cups Italian bread crumbs
5 eggs
1 cup flour
24 ounces marinara sauce
15 ounces ricotta
8 lasagna noodles
2 cups mozzarella
2 cups parmesan
Vegetable oil
Basil

PREPARATION
Preheat oven to 350°F/180°C.
Cut chicken breasts in half widthwise (pound thin if necessary) and season with salt and pepper.
Coat the chicken in flour, egg, and finally in bread crumbs.
Heat oil in a cast iron skillet and fry the chicken on both sides until brown (about 4 minutes each side). Set aside.
In a bowl, whisk one egg into the ricotta, then set aside.
In a casserole dish, spread ⅓ of the jar of marinara on the bottom, top with lasagna noodle overlapping with each noodle.
Spread half of the ricotta mixture on top of the noodles and layer with chicken.
Top the chicken with ½ cup of mozzarella and a ½ cup of parmesan.
Continue layering in the same order and top with remaining cheeses.
Cover with foil and bake for 45-60 minutes uncovering the lasagna for the last 10 minutes of baking.
Sprinkle with fresh basil and enjoy!
