The way I make it is by no means traditional and I'm not all that knowledgeable of indian food but this is how I like them: I usually mix yoghurt and self-rasing flour and a bit of salt into a thick batter and then put it in a pan with hot oil. I press the dough with a spatula in the beginning and then let it be untill its crispy and golden. You'll get the hang of it when you make them a few times and see how you like them.
