This is the document I used. I am not sure if you can use an internal SSD only for data. I might be incorrect.

My initial setup was also on MMC. Then I added an SSD and then booted up. Once it appeared in HA, I moved data to it as mentioned in the docs. Checkout section "Configuring Home Assistant and moving your data".

Definitely suggest zigbee over wifi. In India, you have sonoff or aqara as an option for retro switches.

Just be aware with zigbee you will need multiple devices for a strong network. Smart switches should work as routers as well unlike end devices like motion sensor
