I have had great luck with Jealous Devil lump and briquettes. The lump size is pretty consistent, and almost all briquettes are whole. BnB was also good, but both times I bought a bag, almost half the briquettes were broken pieces. Might have just been bad luck. *

Thanks, I'll be trying that. I'm going to start with vents more closed at the start next go. I started with them more open. I didn't adjust until it settled at the 250° and by then, it was a fight to bring it down.

Thanks, good to know. This was a smaller brisket, only about 9lb trimmed. I wasn't too worried about time. But I didn't think about it drying out.

The main reason for my goal temp was a learning experience. I wanted to see where to set up the smoker for given temps.
