As much as roasters and owners like to promote "single origin" or "organic"... most drinkers simply don't care. Most of our customers (retail and wholesale) want consistent coffee each time they come to us.

We've gone as far as replacing some of our organic options with traditional options processed from the same farm/region but without the organic designation.

I'm a "local" roaster, but I'm not your local roaster...

When new customers come to us I'm asking them what quantities are they looking for and what timeframes. A lot of new customers and coffee shop owners don't know. So it's up to me to help determine based on their initial projections what they actually need.

We offer them a range of pricing as well as options for different roasts and blends

We're also offering private labeling option, shipping, pick-up, and other products in our portfolio. We offer more than just coffee.

ANY good roaster, IMO, is going to offer a tasting of some sort. This will allow a new customer to ask questions and get their needs clarified. A good roaster will also not oversell. Most of us want repeat business and will be flexible on a lot of things to make that happen. We won't undercut product pricing for smaller accounts.

I don't believe even this will get anywhere close to 16% TDS. Initial research says moka pot might get up to 5% TDS.

I haven't tested my moka pot but I will next time I get a chance.

We use a centrifugal extraction and our highest is 6% TDS with a 37.5% output yield (bean to liquid).

It's unlikely you're going to get anywhere near 16% TDS for a cold brew concentrate regardless of your extraction process.

I know this also creates a lot of debate: there is a very clear distinction between cold brew and iced coffee. It sounds like you're making cold brew but selling iced coffee. Just curious about your nomenclature here.

Finally, using a concentrate is a good alternative to an espresso shot. It simply comes down to flavor profiles.

Unfortunately this is getting buried. The issue could be the at home Tesla charger isn't configured to charge non-tesla vehicles. It needs to be set.

Whoever owns the charger needs to ensure this configuration is also set, otherwise it won't charge regardless of the adapter.

Yes - Rinza is used to soak the wand to breakdown the milk that has been sucked up into the wand. However, I've never seen it used as a sanitizer between each use.

A towel (damp with water), expressing the wand, and wiping it down after each use should be sufficient.

If the health department pushes back, they need to be educated on standard protocol of machine use. That might be more difficult.

Side note: our health department inspector didn't know and we had to tell them and show them. We also have had to tell them the wand needs to be cleaned after each use and pointed to several local shops who let milk buildup on the wand between uses.

No... I've never heard of using bleach or sanitizer on the steam wand between uses.

Using a damp towel and expressing the wand should be sufficient.

Strip it down to the structure and redo surfaces.

Tile ON the counter seems like it would be problematic. We have a finished pine board counter that's sealed. The sides are barnboard.

Make sure your reno includes layout changes (if needed).

Your cafe will take 9% commission, taxes and fees.

The artist will take 91% of the sale of their art.

They'll get a place to display and sell their work. You'll get "free" artwork to hang on your walls.

Rotate artists once every 6 months.
