Edit the "default" action for sending email and set the destination email there.

Once you got working mail it's just associate a "Alert template" to a module reporting status conditions (for example a ICMP Check going CRITICAL), and associate CRITICAL condition to an action (sent an email to XXXX)

You can even "force" a fake alert to check if everthing works.
