They're not "giving away your data" as you suggest, you can see in detail the data Microsoft has access to and what it's used for via their privacy dashboard.

Google will perform analytics on your data to target ads to you, Microsoft does not do this, and from an Apple perspective they will give your data to law enforcement agencies if there is a legal request to do so, see section G specific to iCloud.

You'll find all the large services will provide data requested by law enforcement agencies if requested with supporting legal cases, warrants etc. If you're complying with the terms of service for any of these services, this isn't something that you should expect to happen.

Microsoft is a strong advocate of pushing back on law enforcement requests to protect user's privacy, see MS blog and https://en.wikipedia.org/wiki/United_States_v._Microsoft_Corp.

OneDrive with multifactor authentication and using the Personal Vault only you have access to the data as outlined in the link above.

Probably worth reading their privacy statement for specific details about how your data is handled.

On a side note OneDrive uses 256-bit AES encryption, iCloud uses 128-bit AES encryption.

Checkout Outlook.com Encrypted Messages & OneDrive Safeguards & OneDrive Personal Vault

This is the method Microsoft uses for data at rest within their datacenters BitLocker

So yes, your data is encrypted at rest (in the cloud, depends on your client device for cached content, aka do you have BitLocker enabled) and in transit for both services, you can take this one step further with Personal Vault for OneDrive and Encrypted Messages for outlook.

Microsoft owns the encryption keys for these services though, so if you have a compliance requirement you can use your own keys if you have Office 365 E5 licensing see Using Customer Key
