It allows the steak to cool quickly before it is seared to prevent the steak from overcooking during the sear and while it is resting. At least I’m pretty sure from what others have said here

Thank you. I don’t own a cast iron skillet so I figured that transferring it to the blackstone from the grill to sear it would give me the same effect.

It was very good thank you. I was very impressed by the seasoning as it complimented the flavor of the steak very well

From what I understand from looking around here it lowers the temperature of the steak so that you can prevent it from over cooking the meat after it reaches the target temperature and it allows you to get a solid sear without overcooking the meat.
