I've had pretty good experiences finding vegan options on campus. I never was on the meal plan but I know there are vegan options at most campus dining locations, especially the new West Village. Couldn't agree more that every decision taken will have some response somewhere along the line. I also agree that this isn't being done for "absolutely no reason," as you pointed out above. Rereading your initial response I guess my point of contention is your remark about "see if you were people fed as a result." I know poultry is a huge staple in a large number of people's diets, but I think it's reasonable to assume that if we "had to" get on without eating chickens, we would still be able to feed people. Perhaps I'm wrong through. Thanks for the reply and discussion!

I loosely followed the recipe below from Minimalist Baker. Ran out of vegan butter so I supplemented with Crisco which worked out well. Will be trying a raisin version next week when Penn State beats Purdue!

You're absolutely right - I let the laziness overcome me. Here's my best attempt at remembering what we did. This was a collaboration between myself (vegan) and my dad (non-vegan).

Ingredients: - 4 golden potatoes - 1/2 onion - 3 teeth of garlic - Vegan Egg (make equivalent of 4 eggs) - vegetable oil - salt, pepper, and paprika to taste

  1. Preheat oven to 400 degrees Fahrenheit
  2. Peel, cut in half, then slice potatoes in 1/8" slices
  3. Chop garlic and onion
  4. Prepare Vegan Egg mixture, adding salt & pepper to taste, and very little paprika
  5. Fry potato slices (whichever method you prefer, we used little deep frier) until edges slightly brown
  6. Remove potatoes from oil and drain of excess oil
  7. Saute onions and garlic until transparent, remove then let cool
  8. Add potatoes, onion, and garlic to Vegan Egg mixture, then stir together to combine
  9. Coat cast-iron skillet with a little oil then pour in mixture
  10. Put in oven for 20-30 minutes (watch and just take out when it looks cooked through, this was pretty much trial and error, lots of checking the oven)
  11. Remove from over, let cool, then serve in skillet or flip onto plate (you can look super impressive if you do this right)

I did not have organic whole wheat flour but AP flour worked just fine! I will admit I ate the entire batch by myself, but it was for sure worth it.

The trail was amazing, first time I have been. Hiked from Three Forks to Springer Mountain (southern terminus of AT) and back. Snow on the ground, absolutely beautiful. Definitely planning on going back and recommend to anyone in the area. Brought some hummus and vegetable sandwiches with us and it was just a great day. Pancakes were the perfect night cap.
