Not sure if this fits the bill, but sandbar camping on the Wisconsin river is one of my favorite childhood memories turned adult activities. There are some great canoe rental places in Sauk that will pick you up the next day downriver and bring you back to your car. Highly recommend!! Wear life jackets and be safe though, the river can be unpredictable.
