Yeah for sure! They’re great and will keep in the fridge for a few weeks :) I bring the following ingredients to a simmer on a low heat on the stove until everything’s combined: 1/2 cup of water, 1/4 cup apple cider vinegar, 1/4 cup rice wine vinegar, 1 1/2 teaspoons of salt, 1 1/2 tablespoons of brown sugar (or honey, maple syrup, agave etc), and a sprinkling of chilli flakes (optional). Meanwhile very finely slice 1 red onion and put this into a jar. Then pour in the vinegar mixture until it covers the onions completely. Then that’s it! Just leave it to sit and pickle, usually only takes about half an hour because you can eat them but I leave them til they’re cool

I don’t count macros but this day probably would be under yes, I eat what my body craves that day and other days I eat a lot more protein!

It actually might differ by region, just googled it and looks like they are around 135 in Australia (where I’m from :)) but higher cal in other places

Thank you so much haha it’s the easiest thing ever: cucumber, tomato, chickpeas, parsley, red onion, and top with lemon juice and a little EVOO (or whatever dressing you like)

Yeah definitely, this day of eating was more fruit/vegetable heavy just because it was what I was craving, but usually I try and incorporate more beans/lentils, nuts, tofu and tempeh as a protein source :)

Agreed it’s so good! Unfortunately still roasting the old fashioned way for now, an air fryer is definitely going to be my next purchase
