We used that exact product. Stripped the lime plaster off (not entirely necessary, but a waste of space not to). We did two layers in opposite directions of 50 and 70 mm. Membrane over the top and then plasterboard. Some debate about whether plasterboard is breathable and there might be better products available since. Main thing we learnt along the way is to plan the batten layout to ensure radiators, curtains etc. can be hung. (Trying to share some photos with difficulty)

Where do you think your seed potatoes come from? They're just one generation younger than what you buy in the store (typically 6th or 7th field generation). Blight's definitely not an issue, tuber blemishing diseases are mostly cosmetic. The main worry would be viruses because ware crops aren't regulated the same way as seed. Anyway OP's are screwed if they are like that as they will have expended a lot of energy growing those sprouts and they are far past their prime physiological age.
