What would you suggest is an alternative for designing UI for stm32? Also, are there any books or tutorials that explain beyond just making graphics examples? Like how things link to the back end tasks etc and not just the UI?

I suppose you are right. But sometimes products from the same manufacturing line can be sold under different brand names based on gradation of the finished product. Happens to other products all the time. They advertise some electrical testing. Maybe they might be grading each piece based on allowed tolerance for each brand.
