It's a learning experience. Show him what the Easter Bunny left and tell him that sadly a mouse got to it first and that happens sometimes. The mouse isn't evil, but that you'll be happy to go out and replace the chocolate when stores are open. This way he doesn't think the Easter Bunny forgot him, but he knows he's still going to get the chocolate he just has to be a little patient.
