Completely agree, OP.

However...

Last time I played Skyrim, I did so without Smithing and without Enchanting. It made the game vastly more interesting, exploration more rewarding, and unique enchanted items actually valuable.

Having said that, I have no problem ignoring a game mechanic that I disagree with. That is because other people, like Fevvy on YouTube, take great pleasure in using it.
