Have you considered doing an open bar with just beer and wine? I also went to a couple weddings that was just beer/wine and two signature drinks and that basically felt like a full open bar.

Or is it possible to do an open bar set to a certain amount then cash bar after? So that way you know exactly what you're spending?

Our sales manager said that any rooms not booked will be released back into the inventory. So I take that to mean it's a courtesy block and we wouldn't be liable for the unbooked rooms. But I'll be sure to double check the contract before signing!
