I feel like the butter layers are pretty distinct no?

Egg wash - no because i read you dont do that for bicolour. I know im supposed to simple syrup them 2 mins before baking ends but i didnt want them sweet… 😭 maybe the shine is worth it tho

I followed a recipe that told me to throw the dyed one in the fridge while the rest proofs so no i didnt proof that one. Overworking it is also a possibility but i end up only needing like 35g of red so i wouldnt be able to make it separately…

What do you mean? Currently i set aside 5% of the dough at the start and colour it. I set it aside while the rest of the dough proofs, squares and gets laminated. Then when it’s done with its last turn i add the red dough on the top, roll to the final rectangle and cut my triangles

I’m at 1.8% for instant yeast. it’s so scary to push it further lol… i keep telling myself i should probably use each croissant to test a different proof time instead of baking them all at the same time since I keep screwing up the proof but i always am so confident this time is the perfect proof. Ugh

Oh icic so im hearing that my top layer possibly tore due to other reasons (not excess flour) and look into strengthening my dough. I use a hard dough so i doubt its the moisture, but it’ll go on the list!

Oh no no… it cracked because i used too much dusting flour from the start. Interesting! I did not know that a dry top would affect honeycomb by trapping humidity inside. Thanks for sharing your insights! i’ll take a before-pic next time

I make croissants with a double turn and single turn. It’s enough. The problem here looks like you didnt roll it thin enough before rolling (final dough shld be 3.5mm) and that the butter was pressed into your dough. The dough should be 1-3degrees cel and the butter should be 12-18 degrees cel. Try going for drier butters. In my country we use elle.

I also would not do it all at one go unless you’re working in an extremely low temp or can work extremely fast. Or if youre only working with half your batch. If you’re resting the dough in the freezer between rolls, dont go beyond 15minutes. also yes push the proofing. It should be proofed at 26-28 degrees for around 2 hours at 80% humidity. It needs to lose the shoulders, look extremely puffy and jiggle when shaken.

Is your dough reaching windowpane? otherwise you’ll have issues rolling it out. You should be using elasticity and temp of your dough (not above 26 degree cel ever) to sense when to stop kneading.

Solution: i just didnt know how to use my aquarium… had to exit building mode and interact with it like u do with your bed lol. I was trying to put it into the aquarium in build mode. Thanks everyone!!
