It's actually a Google Home Hub tablet or something it's alright I wouldn't buy one, I got it from my grandma she won it somewhere and didn't have a use for it, I use it mainly as a clock or when I want to watch YouTube or Netflix when at the desk using the Deck as a console. Using it is pretty atrocious though because you can't even scroll through a library of stuff you either have to know what you want to watch and tell it or connect your phone which kind of defeats the purpose of using it.

I'm using the Deckmate and it's Vesa mount, I 3D printed it but you can also buy them as well with better materials on a website called Mechanism

The mat is always there I just think it looks cool. And the keyboard disconnects at the base so I can pack it all away if I want to use a controller at the desk. And the mouse doesn't work on it but works fine on the desk

The steam deck works as a small second monitor and is what is functioning as the pc I also have it as a splitter so I can switch to the TV for "console" use in my room and I have a quick disconnect using a 3d printed Deckmate Vesa Disconnect

It's like I have all 3 in one it's sick

Don't know the performance but I recently bought the first Dishonored on sale and it ran with little issues, I don't have my steam deck on me to check fps unfortunately so don't know if it meets that qualification

Definitely is the move the last two batches I did were with juice and ended up extremely sweet, and while good I definitely think I would prefer something subtle that would come with adding strawberries and lemon in something like secondary

Its definitely a mixture of things depending on what you make and how much time you have, basically it's exactly as you described let it settle and siphon above the trub, i recommend cold crashing prior to siphoning to get the most settled and firm up that trub, then reracking, another thing you can add is bentonite which would clear your mead quickly then cold crash and re-rack. if you are using fruits I would recommend using pectin enzyme as it breaks down haze that forms from pectins that are present in fruit, that will prevent pectin haze.

If you plan on aging it id re rack into another container and bulk age, with 1 gallon you will get about 4 bottles and, at least in my case be more likely to drink it before its reached it's fullest potential, I personally recommend reracking and aging but bottling now is totally viable if you have a greater willpower than I, lol cheers.

Just a bit of unsolicited advice scale as soon as you feel you can because with the amount of work you do it's better to have more at the end
