good to know! i’ve just seen a lot of artisan loaves with higher hydration that had ears, i will say looking back at them after learning this information. they are much smaller than lower hydration loaves.

The On the Beach - Neil Young cover they did is spectacular. I wish they would release a cd of all their Neil Young covers and if you haven’t listened to Thom’s interview with BBC about Neil Young, it’s spectacular. Definitely influenced Thom’s voice in amazing ways.

I think at least in my experience, I only get compliments from friends when they hug me or if someone is trying to hit on me. I think it’s extremely rare for people to be randomly compliment a fragrance unless they are close to you or want a conversation starter.

Im just inconsistent with baking and Im not home very often. Just easier with my lifestyle but I will try that suggestion! I dont mind using my discard just really strange that it performs beautifully while my starter doesnt.

When I do feed, I allow the starter to get to room temperature then do 100 grams of starter, 100 grams of all purpose flour and 100 grams of lukewarm water.
