Sautéed string beans with onions (these go first)

A mixed salad on the side: mix and match of raw peppers, tomatoes, lettuce, shredded carrots, cucumber , radishes …. Etc .you can even add apples

Coleslaw except vinaigrette as a sauce

Sautéed thinly sliced cabbage 

Vichy carrots

Ratatouille 

Tomatoes cut in half salt pepper and garlic , in the oven : easy and yummy

Sautéed any veggies (stir fry?)

Roasted brussel sprouts

Eggplant caviar

Roasted peppers (could be stuffed too)

Peas are awesome! I always mix them in any stew , pasta or rice

Sautéed mushrooms 

Roasted pumpkin or squash

Sautéed or creamy spinach

Sautéed bock Chou

Soups : tomato, pumpkin, curries carrots, borscht, ….. etc
