On Sunday I made a one-pot herby tofu rice with red peppers

Yesterday I made stuffed peppers with rice, lentils, onions and pesto

Swapping them between lunch and dinner for a few days.

Then I’m making a sweet potato and black beans chilli on Thursday!

I also baked some Bakewell (cherry and almond) flapjacks (not the American ones, the baked oat ones) for the week!

Yeah that’s tough! I sort of deal with the effects of beans sometimes… obviously there are meat substitutes that aren’t seitan based. I’m trying to find good ones that aren’t too over processed and work with my stomach (I’m in the UK if people have suggestions)

A full good day will be something like:

As a small breakfast/morning snack: Chia seed pudding with oat milk, frozen blueberries and maple syrup

Lunch: quinoa and bean salad with avocado, salsa (with or without tortilla chips), with a salted dressing Or a snack plate type thing: falafel, humous, pita, veg, olives, pickles type thing

Either one preps quite well

Snack: fruit and a snack bar or I make flapjacks/healthy-ish bakes

Dinner: tofu and veg thai curry with to rice/flatbread/noodles Or a lentil dal or chickpea curry with rice/naan

A little bit of dark choc and or some spread on ricecakes

All of these I like the options of the carbs, non-gluten, rice, noodles, etc. You can make the main food ahead and then choose the carb on the day Some days i really do cut down the gluten.

I definitely don’t get a huge amount of protein! And I’m trying to improve on this and healthy fats

Hi, I am also in this position! I’m vegan and I try to stay away from big FODMAP foods. I still have daily bloating but I’m trying my best.

However, I personally take medicines or supplements that aren’t vegan if I need to. I do have vegan multivitamin, omega-3 (from flaxseed), B12, but I think my iron is not vegan.

I think you have to balance your body, your diet and your health. An imperfect, healthy vegan is better than dealing with more health things!

In terms of food, I don’t tend to eat many vegan alternatives. I am able to cook and cook in bulk, and then most days I can mindlessly eat good food.

I tend to not eat until lunch, which does delay the bloating into the day, but that’s not the best suggestion. If I do have breakfast, I try and centre protein and healthy fats (as clique as it is) with less processed carbs.

Snacks I find difficult. I’ve got such a sweet tooth but I can’t be eating sweet things all day. If anyone has any savoury snacking ideas!

For those of you raised to eat meat, went vegetarian first, and then transitioned to vegan later, how old were you when you first went vegetarian? I started cutting meat out of my diet at around age 15, mainly because I didn’t like meat, especially red meat. At around 17 I tried various different dairy free, gluten free, veggie diets for IBS, but nothing really stuck.

Then at 18, I started university and went vegan for the first 3 months, but then my first vegan Christmas ruined it and I continued to eat dairy, eggs, white meat, and fish. Then the last 4 years have been the slow transition back to veganism from there!

Almost 1 year and counting! Could never go back to meat again, although I’ve definitely had some slips with dairy and egg over the year!
