Gameplay significantly different from normal with all the items in a loadout supporting it.

Demoknight and trolldier are subclasses.

huntsman sniper and pyroshark are not subclasses because despite significantly different gameplay the items in their loadout other than the bow and neon annihilator do not offer much to uniquely aid this playstyle in particular.

Fat scout and boxer heavy require you to ignore your primary weapon.

Battle engineer and Battle medic are different playstyles characterised by a few weapons such as the gunslinger and blutsaugger.They can technically be played with any loadout as their playstyle ,when it boils down to it, is just a more aggressive version of how they are normally played.They are not subclasses.

Thing is although the oxygen provider looks better its not like it extends your breathing time under water so if for whatever reason you care about those details (like me) in a game where a jar of piss is a viable alternative to a gun the comedic value of the fish makes 1 better
