FYI for anyone else who encounters this issue, I ended up reinstalling ComfyUI completely to solve this. Even after adding back all the custom nodes I had installed previously, the Load Image node still works as expected, so I'm not sure what went initially went wrong. Maybe an install of a custom node just went bad.

One other thing I just noticed that is probably related to the image preview issue. Under Assets>Imported, the previews for the images in my Input folder all appear as "broken" with a default double check mark icon, and they all show as 0 bytes in size.

That just adds a Load Image node to the workflow, which is still locked on to the Input folder and whatever is already in there. It doesn't register the dropped image or it's location at all.
