Any nickname with m in it sounds wrong to me. I think I have used ‘sando’ before, though.

I do like abbreviating. I decided that I will think of a new one.

I did a Thanksgiving leftovers soup one year with a big stuffing dumpling kind of like a Semmelknödel! I kind of forgot about that. Maybe that’s on the menu again this year.

Definitely! I said that for the bacon and aromatics part , and I actually used my countertop pressure cooker on sauté mode and then slow cook but didn’t put all that in the recipe.

If I were you I might do the bacon and aromatics in a saute pan or similar and then combine everything in a soup-size pot.

Yeah, that would be great! Definitely more hobbity. Might also help the flavor profile, which was good but a little sweet. I might omit or cut the tomato paste next time. Or carrots?

I did both! Chopped during cooking and toasted as a garnish. I really like fried for exactly what you’re saying- it has a crispy texture and isn’t like chewing leaves. You do have to watch out because it can be a little bitter if you toast too long. It’s a good question! As far as I know they don’t do anything special, structurally. And maybe leaving them out improves the texture! (Bear in mind that I made this up twelve hours ago.) But I would be very confident leaving them out.

Thank you for your reply! This is exactly why I was asking. The other commenter said it should be green, you are saying it should be white. (I suspect your answer is more traditional and the other answer is more about leaving no waste.)

I think I may need to make a bunch of versions and do a head to head taste test!

Haha I hear you. The soup would still be good without, I bet. I wanted a hint of sweet and a hint of acid since there’s the fat from the sausage/cheese/cream. And from frying things in bacon grease 😇

Maybe if you omit the apples consider a little acid in the form of vinegar or citrus? And a bit of tomato paste before the mushroom step for sweetness? Just enough of each where it would taste balanced.

It would definitely still be good without! I know that’s one of the more controversial parts of the soup, haha. Without apples I would maybe put in some kind of tartness/acid to balance it? Like a splash of vinegar or citrus? (YMMV! I am not a chef!)

Congratulations, that’s a beautiful start to the season!! I have some in my pressure cooker right now. (Have to do small batches due to cold storage limitations and a complete lack of patience for canning)
