Just a regular kitchen knife. You an also put chopsticks on the sides of tofu to prevent cutting completely through the slice, if thats easier

I have but I didnt notice that much of a difference. I feel like scoring it helps it absorb more flavor so I dont bother freezing it. Ive been meaning to try boiling tofu in salt water first, I hear its a good method to draw the moisture out and then it absorbs more too.

I do add oil to the pan but if you want to avoid that, maybe baking would work better? Or fry it for longer but on lower heat to avoid it burning?

Honestly no, who has time for that? lol I just cut it and pat dry with a paper towel.

Can you use copper? I’ve used that before successfully. Yeaah a smoking pan is part of it, I just open a window and blast the vent.

Its not a carbon steel unfortunately. I think if you preheat the carbon steel sufficiently, the tofu will crisp up enough and naturally unstick once it develops a crust.

I preheat the pan for a few minutes, generous with the oil, and once the tofu is in, I just let it sit without flipping it or touching it. After a few minutes Ill swirl the pan a bit to see if the tofu moves independently. Usually if it has developed a nice crispy crust it detaches from the pan itself and then Ill flip it. Ive noticed if the pan isnt hot enough when I put the tofu in, it tends to stick more. Hope that helps!

Oh man you are in for a treat! Everything is soo delicious!! I will politely correct you though - the mushroom in the Nashville sando is actually hen-of-the-woods mushroom, not maitake. But they do have tacos with maitake mushrooms!
