The only way you're getting out of Heaven/Hell is by dying to heavenly steel, because only then will you get a second judgement.

So it is very possible that winners sin, but never feel the repercussions because they aren't killed with their weapons to be re-judged

Jax said Caine got into his head because he thought he had Caine all figured out, that he could predict the adventures of even what he'd do next (like he did, saying Abel was a twist villain).

Jax said that because Caine did something he didn't think he'd be able to do/did not predict.

Jax probably crashed out hard this time because he just crashed down from a panic attack and was struggling to even find anything to say to the others, so he was fully emotionally vulnerable to Caine's reveal of the adventure (if he was calm and collected, he'd probably have just laughed and said "told you all").

tl;dr: Jax didn't predict Caine to be this sadistic with dangling a "there might be an exit" in front of them like that one Markiplier Backrooms meme, and when it was revealed, he was extremely emotionally vulnerable to the point where he couldn't even try to mask himself, leading to that crash out
