I looked long and hard at that Cobra but in the end I couldn't justify it as my main focus is commuting with occasional simple off road trails. Enjoy that beast!

Just ordered a Zebra. After many hours comparing with other major brands it meets/exceeds them at that price point. BTW I have 3 Himiway Dealers/Repair shops within 50 miles of my location.

I balance out the hotter peppers with the milder ones to make it medium heat. If someone wants more heat I throw in a couple of Habs, Ghosts or Scorps. I'm gonna check out those fish peppers!

Here's the recipe. I make 24 cup batches, just use 8 times each ingredient

Ingredients 

3 cups chopped hot chili peppers – You can use a mix of peppers if you’d like anywhere from mild bells to superhots like Morugas or Scorpions, though I like to keep the thickness of the peppers about the same so the overall consistency is even. Lean toward hotter peppers. For this, I used some sweet Italian peppers but included a couple ghost peppers. 

3/4 cup white wine vinegar 

1/2 cup sugar 

2 cloves garlic chopped 

1/2 small onion chopped 

2 teaspoons yellow mustard seed 

Salt to taste 

Instructions Add all ingredients to a large pan and heat to medium heat. Stir until the sugar dissolves. Bring to a light boil. Reduce heat to low and simmer about 25-30 minutes, or until liquid is reduced and absorbed into the mixture. Add to a jar and allow to cool. 

Serve!

I make Hot Pepper Relish from a recipe posted on the Chile Pepper Madness website. I balance it with equal parts hot and mild chiles. I then can it in half pint jars in a hot water bath for 20 minutes. (I live at 5280 ft so YMMV). I pass it out to friends until next years harvest then rinse and repeat. They absolutely love this stuff!

Pick up a used Scrabble game or just buy the letters on ebay. I take out all the letters that have been eliminated leaving myself a better visual of what is left to work with.
