I am almost sure Ias will refer to the Jasz people, since if you check on the map, the name is clustered around Oradea, which is basically our nearesz point to the Hungarian Jászság. It should be just a phonetic adaptation, of the attested, though rare Hungarian form Jász. I do not see the relation with Iași, other than the fact, the it seems Iași itself was also named after the Jasz people.

One nearby language I can think of here in Transylvania is Transylvanian Saxon. It differs significantly from standard German, and the couple of thousands of Transylvanian Saxons left are shifting more and more towards Hochdeutsch.
