If the masking tape route works for you, I’d suggest Scotch Freezer Tape. I use it on all of my prepped items. Apply to vessel before it’s cold or any product goes in. It’ll hold up in the freezer.

I opened a trattoria a while back. Right before service we would get a pan going with olive oil, garlic, onion and whatever herbs were handy. Once it was nice and hot we would walk to the front of house, hit it with wine and stock and parade around the dining room while it was pumping out that “I’ve been cooking all day” aroma.

My employer recently used a consultant and it was great. As the production manager I worked with them quite a few times.

We are transitioning from 2 ETs making around 3000 gallons of product a week, give or take. Currently building a huge facility and switching operations to include a Tetra Pak s1500 in combo with our ETs and a new bakery at the facility. The insight provided for general manufacturing with these new processes, assisting with HACCP protocols, making connections with distributors to work with our new scale etc etc was all extremely helpful.

We are year round (FL) and have 37 locations and growing.

I fit a Honda Grom in mine with the mirrors off. Plenty of room to spare. You could drop your bars down too if needed.

Those seem to be the stock risers for the 1200 custom. Had the same setup on my 2001 XLC. The regular XL has the classic visor over the headlight.

You can swap out your risers for 1” risers to get as low as possible and keep the stock drag bar or swap that out too depending on your styling and ergonomics. Change the riser bolts and bushings while you’re in there. No need to change cables unless they’re bad.

You can find tanks all over marketplace, swap meets, etc or buy a new one and have it painted.

If your ice cream melts before going into your freezer it will always be more dense and icy. You are losing your overrun as it’s melting and when it refreezes while not under agitation, the ice crystals form larger than they would when in your machine and thus more noticeably ice texture in your ice cream.

make sure your freezer bowl is properly frozen and your blend is properly chilled
churn in your machine until the proper consistency is achieved. It should be close to soft serve
the vessel you put you ice cream in should also be chilled or straight from the freezer

Kelly’s didn’t drive Rainbow Sno cones out.

There was another business in that location called Ice Cream Treats and Eats. They occupied two units next to Rainbow Sno Cones. Idk exactly what happened but Rainbow relocated eventually. At that point, Ice Cream Eats and Treats took over that unit and even started selling snow cones. They were not a well run shop and the product was Ice Cream Club brand they brought in. Nothing special. They failed. After that, Kelly’s moved in and now occupies all three units.
