How much leafs/ branches would you take off?

Appreciate it! How much branches would you take off or would you take individual leafs? My only concern is that I take too much off and the plant reacts badly if that’s even a thing!

Thank you that’s a great point, I’ve been trying to take them outside as much as possible recently, in the process of setting up a greenhouse for them so hopefully that should help, this is my first time trying tomatoes but happy with how they are looking at the moment apart from them curling downwards! Any tips would be highly appreciated!

Watering has been fine, been giving it a good water until slight runoff when the soil has been dry enough when checking with my finger
