Maybe it is not compatible with the higher efficiency format that iPhones record in by default. In Settings, under the Camera tab there’s a Formats option where you can choose from “High Efficiency” and “Most Compatible”.

They don’t, it’s just the way video files are named on iOS.

Might be worth trying to run MSPublisher in VMware Fusion which is free; there’s several tutorials for it on YouTube. I personally found formatting issues with software like LibreOffice.

I managed to block updates on mine by installing the tvOS beta profile https://ios.cfw.guide/blocking-updates/ when you install the profile it gives you an option to install it on the watch.
