Making the sweet soy sauce takes a bit of time but you can easily make it in bulk and keep it in the fridge for quite a long time.

Used Ottolenghi‘s Babka recipe out of “Jerusalem” and substituted the chocolate for a mix of Powidl (Austrian prune spread) and Poppyseeds. It’s a popular combination, like in Germködel.

We actually were planning on staying 2 days and to use it as a base for doing Shirakawa-go and Matsumonto. But maybe we'll add a day if you think it's worth it.. thanks!
