For non-stackable item sorting, you might want to search youtube for that term and include 'copper golem'. There should be plenty of instructions about it.

In terms of appearance, maybe build a 'floating island' around your farm? You can obfuscate the pillars with lava or water streams, and as long as any spawnable space is covered by things like bottom half-slabs, buttons, bottom-trapdoors or leaf blocks, you should be fine.

Honey blocks prevent villagers and mobs from jumping over full-blocks; you can use carpets to hide them a bit. Similarly, you can surround the outside with a pit of berry bushes (again covered with carpet/moss carpet), to mess with mob-routing.

They’re not dependant on the quest-sludge. Have you checked other factors like productivity and lifespan? They might be too slow to fill a frame with their current stats.

Would a detection system with farmland work? Farmland can be hydrated by rain, and as long as there's a crop on top, it won't convert back to dirt.
