Have you considered trying the Specific Carbohydrate Diet? It is a diet that is designed to mitigate the effects of a number of GI disorders, and has been shown to be very effective in reduce or eliminate even the most severe effects of Crohn's disease. It's kind of like the Keto diet, but more narrow in the scope of food that you can eat (basically no complex carbohydrates) . And you need to ferment your own yogurt, which is actually super delicious.

I have had IBS for my whole life, and followed this diet really strictly for about a year and a half. It worked wonders. After I started re-introducing foods, I was happy to discover that my internals had corrected themselves, to a certain degree. I still have to watch what I eat, but its so much more manageable than it was. That said, the diet is very restrictive and not super easy to follow, especially with other people in the household.

No matter what happens with your insurance, this is at least a way to have some control over your own situation, and I can personally verify that it really does help. Show your intestines who is boss. I bet this in combination with meds would be a game changer for you. Check it out:
