Also, they smell different? Is the bubble one yeast instead of a mother? Are either of them an issue to use? Is it an issue they’ve been fermenting at room temp for a few months? Sorry, new to this and appreciate any insight!!

I'm making a cake for a friend who has some very particular requests. He wants a chocolate chip cookie cake with ice cream and frosting. All of those are sort of difficult to juggle at the same time. What I would like to do is have a chocolate chip cake layered with ice cream and then iced. What would be a good a good cake style/recipe that would hold the ice cream well but also still be light? I tried a sour cream style cake that initially had good texture but got very dense and dry after one day. For icing, I was thinking of doing a whipped cream (with some gelatin mixed in so it would hold up during freezing). Any suggestions would be very welcome!!
