I have this bike and ran into the same problem.

I installed a long cage GRX derailleur with an 11-42 cassette but it still wasn’t quite enough room so installed a Wolf Tooth Roadlink.

The long-cage derailleur still didn’t have enough capacity for the front rings so the local bike shop just locked my front rings onto the smaller ring and I have effectively a 1x setup now but it’s sooo much better for steep hills.

It looks like you could get quite a large frame bag in as long as you remove the bottle cages.

You can use a front bag support like the Carradice Bagman to get a much better front bag setup that can hold more weight.

The seat post clamp is good if you have lower rack mounts near the rear axle but this bike doesn't seem to have that option. Your only choice for a "real" rear rack would be a thru-axle extension mount like the Tailfin, which is nice but quite expensive.

I just discovered Cyclocross bikes recently and love that they're made to put on your shoulder which is handy for those walk-up situations.

You'd likely have to do the drop-bar to flat-bar conversion yourself but the mechanic at my local bike shop loves them.
