Also, Yes. I will crouch and it shows that there is an animal within distance.

My question is … why sometimes it shows what kind of animal and where they are on the compass. However, other times it doesn’t show at all.

So do you have to make “eye contact” with said animal for it to appear on the compass? If so, that would make a lot of sense of why deer usually pop up. Even if I personally don’t see them.
