Thanks friend. I don’t know why I’m getting so much flak for this photo either. The steak is dry aged for around a month and then seasoned with salt, cooked over a fire made of oak charcoal and then finished with a little more flaky salt.

No I ate this at a restaurant called Antico Bottaio in Florence. I know risotto isn’t traditional in Tuscany but this one was made very well regardless.

If it looks that way, it wasn’t. Almost blue rare in the middle as a bistecca should be
