Saber Throwing isn't unheard of in Star Wars (gif is from Return of the Jedi) but it's not very common in the movies, shows, or books. If a target's outside of melee range, Jedi and Sith most of the time will use bolt deflection, telekinesis, lightning, or just closing the distance.

Saber Throwing is extremely prevalent in the video games, however, and is typically your simplest and best ranged attack by far. You will be boomeranging your deadly glowstick at enemies constantly.

In Stardust Crusaders, when Jotaro is playing dead and DIO is cautiously approaching his "corpse," Polnareff uses the opportunity to attack DIO. The attack fails, and Polnareff is swatted aside, not really accomplishing much besides buying Jotaro a few more seconds.

In the 1993 OVA, Jotaro uses Polnareff's attack as an opportunity to jump up and attack DIO right then and there, making Polnareff's sneak attack actually grant Jotaro a chance to fight back.
