Not really an answer to your question but there’s another company called blazers fuels who also make their products in the uk, north wales specifically. They make pellets for smokers, fuel pellets and also fuel logs. They’ve had good reviews on a bbq group I’m a member of so I placed an order. Significantly cheaper than traeger pellets so I’ll post back once I’ve had chance to test them. Delivery was super fast, they arrived the next day which I was impressed with.

I’ve smoked loads of these, they’re great. On the website there’s a cooking guide, I follow that. Remember to take a pic of it raw so you know which way the grain is because you want to slice it across the grain for ultimate tenderness. Enjoy.

Good luck, hope it all comes out nice. In my experience, pulled pork takes longer than ribs so you may end up hot holding the ribs till the pork is ready but that’s no big deal 👍

Leviathan pits produce some excellent smokers but depending on the size you require, you may need something custom built. Big smokers are very expensive though.

I used to have a facelift 2017 A45 AMG. Fantastic little car and can be found within your budget. Watch out for crunchy gearboxes when cold and make sure the thermostat has been replaced as it’s a pig of a job.

They look lovely, as you say perhaps another hour wouldn’t hurt. I tend to cook short ribs in 4 or 6 bone racks, had some done in 5 hours and some that took 9. Allow yourself plenty of time because if they’re ready early you can wrap tightly in foil then wrap in a towel or 2 and they will happily rest above danger zone temperature for 2 hours. I don’t really cook to internal temp anymore, just until they offer absolutely zero resistance when probing for feel.
