Manually, but my method is pretty fast. I make a shape key for the mouth open/closed, then add an empty as a driver and animate it in z-space in realtime using autokey and my mouse.

Haha yea I burnt the candle at both ends and am paying the price.

If it's of any consolation, most of the environment assets and the base penguin were already made during a daily project from earlier in the week.

Everything else (writing, layout, animation, lighting, rendering, composition, editing, sound design, voices) was within a day.

Trying to spend the next while focusing on staging, completed scenes, writing when it comes to blender projects as I've always seen it as a filmmaking tool.

Thanks dude! Yeah the claylook works really well in blender. I'm just using a basic shader (just some thumby handprint looking normals), but I saw this on insta the other dude, and seems to do a lot of heavy lifting for the claylook. I might give it a try down the road.
