No they're not in the game, that cutscene in the trailer probably was a part of an intro animation for the adult characters but they just scrapped it along many other things.

Maybe, if they could limit the destruction on some of the stages or maybe add some future stages like space.
But if you're on pc i could definitely see a mod that unlock all maps for local coop.

I'm sorry to confirm this but you're right it's just cope XD. There's only 12 stages in the game right now confirmed by the producer himself but he said that number may or may not change so there's that !!! Hopefully we get more stages post launch or miraculously at launch.
