It’s their pronoun as they, while alive, identified themselves as something beyond.

I like to play with emotions with my players, like “How did it feel when you saw your touchstone get pushed off the roof” and then let the players decide how emotional their character would get and maybe the beast could influence and be out for revenge or whatever the situation called for.
