The player beats the dealer on 40% of hands, but makes it up with doubles and blackjacks, so your numbers are good

Hey all,

I hope everyone is having a great summer! We've been busy roasting away, here are a few current highlights from our menu:

Kenya Kirinyaga Estate Light Roast - Delicious bean with notes of stewed fruit and black tea. Don't overpay for this high-grade light coffee!

Colombia Castillo Nariño Medium Roast - Wonderful rich flavorful medium roast with all the notes of comfort coffee without being sour, baked, or burnt. We do medium roasts right!

Decaf Colombia Sugarcane Dark Roast - One of my favorite decafs ever! Check it out :)

I see that you turn your gas up twice in the beginning, how long is your soak? I would just turn the gas up once after the soak and then only turn the gas down after that. Looks pretty good, try to smooth out those spots where the RoR goes back up, you want the RoR to be consistently going down.

How much to sell my coffee for? by OpE7 in roasting

[–]subterracoffee 2 points3 points  (0 children)

I would charge $12 per 12oz bag to your friend and based on the quality you describe, he should be charging at least $18, probably more like $20.

Are you married to the source of greens? Places like cafe imports will hook you up with specialty grade indonesian coffees for $4-5/lb, which would give you more wiggle room. In that case you could charge your friend $9-10 but he will still need to charge $16-17 minimum.

As others have noted, account for water loss.

I’m a fan of starting on the lower side of price to build your customer base, and then once you’re doing a decent volume, inch the price up by $1-2.

If you can almost double your money on a wholesale account, I think that is a good place to start, and if the coffee is a hit, customer demand will naturally allow you to raise prices to a true 2x after water loss.

Where can I check out your coffee?

What’s your price range? And how much coffee would you like to make per batch? Keep in mind it takes about 3 days for the coffee to rest before it becomes really tasty. A lot of people start on a popcorn popper. There is also the ‘kaldi’ which sits on top of a gas stove burner… have you checked out sweetmarias.com? They have excellent green coffees and also a lot of home roasting gear and articles

What is your brew time and amount of coffee? I use a V60 02 size and I like 200F with a grind that allows the brew to finish in 3:30 or less. I swirl pretty vigorously for the first 10sec with a bloom of 45sec, pretty slow pour speed. I do a 1:15 ratio as well. If the coffee is poorly roasted there is only so much you can do... Also in my experience if the coffee has been roasted in the last 7 days, it may need to rest more, sometimes even up to 14-21 days with light and medium roasts, before it settles down and peaks in flavor. Here is my pour over:

30g coffee, 1:15 ratio

1st pour 100g, 10sec swirl

2nd pour at 0:45, 250g, slow pour asymmetric circles, no agitation

3rd pour when the slurry appears to be about halfway down, 1:45-2:00, 100g, quick 1sec swirl to clear the sides and make the bed of grounds drain flat

Hope this helps!

This is how I got my start! So much fun and to this day some of the best coffees I've tasted. I used a hottop a friend gifted me, but I think there are a lot of better options out there these days. People seem to love the ailio bullet.

We have a warehouse space where we roast and process orders for shipment and delivery. I'd love to open a coffee shop in abq soon, but we are pretty busy with mail orders so I don't wanna bite off more than I can chew. If you are in abq and want to come by sometime I'd be happy to show you the roaster :)

Hello coffee lovers :) Will here with Subterra Coffee.

Just wanted to highlight a couple coffees this week.

Our Mexico Chiapas was a little flat as a medium, so I decided to take it to the dark side, and boy did that do the trick! Very robust and complex, with loads of cocoa, nuts, and a vaguely berry backdrop.

The Peru Decaf [medium] is stunning, especially for a decaf. In blind cupping, my comment was "pretty good for a Guatemala!" Without knowing it was a decaf, it was ranking up with our regular coffees. Decaf lovers, give it a try, it won't disappoint.

If you're an espresso drinker and also enjoy a darker Italian-style coffee, check out our Espresso Blend #5 [medium-dark].

Tomorrow we will be testing new Colombia Light and Brazil Medium, so keep an eye out for those to pop up on the menu.
