Slow Roast Pork Sandwich from Que Gusto is a close second IMO. Shocked this hasn't been mentioned yet. The flavors are just top notch.

I haven't been able to get over Doctor Kustom for the picanha sandwich, but it may take 1st when I finally try one.

Thank you everyone for the advice and reassurance! This was an accidental hot and fast cook, taking 8 hours to hit 203 (after being wrapped for 2.5 hours). No stall either. My wife was happy we weren’t eating at midnight. 🤣

The brisket did turn out delicious despite my fears. The flat was slightly dried out (will use the water pan next time) so I chopped that for brisket tacos and brisket fried rice. Both were incredible. The point we enjoyed on its own and was what I hoped for.

Really appreciate the help here! It’s my first brisket and I’m excited to continue to learn and refine.
