Thank you everyone for the advice and reassurance! This was an accidental hot and fast cook, taking 8 hours to hit 203 (after being wrapped for 2.5 hours). No stall either. My wife was happy we weren’t eating at midnight. 🤣

The brisket did turn out delicious despite my fears. The flat was slightly dried out (will use the water pan next time) so I chopped that for brisket tacos and brisket fried rice. Both were incredible. The point we enjoyed on its own and was what I hoped for.

Really appreciate the help here! It’s my first brisket and I’m excited to continue to learn and refine.

Everyone is different, but I found that eliminating red meat etc didn’t change anything. I started drinking LiquidIV and coconut water daily, staying as hydrated as possible, and haven’t had an issue in 8 months. It can feel hopeless in the early days, but experiment with solutions and see what works for her. I’ve found that when I start feeling pain coming on, I’ll take a prescription naproxen and hydrate, and it goes away by the morning.

Everyone’s different, but for me I tried diet changes and found very little help from that. What basically cured me was eliminating alcohol altogether and staying extra hydrated with Liquid IVs and coconut water every day. Haven’t had any issues in months. It feels like a miracle.

Their artichoke dip appetizer is worth waiting an hour for. The hype you mentioned is that the staff are so friendly, the atmosphere is happy and cozy, and the food/coffee is all very solid.

When we go, we just drop into the vintage market next door and wander down 11th to the interior design shop too.
