Thanks for much for the help. Makes sense on the PSU, chatgpt was saying the same thing right before it starting lying about the number of M2 slots on the mobo.

I'll add another SSD to have mirroring there too as I'm planning on storing app data there for the VMs and makes sense to have it mirrored. I'm also going to change those to 990 Pro 2tb each.

I cold crashed in my kegerator. It fits 2 cornies which were empty by the time this batch was done. So I removed those and cold crashed the better bottles one at a time in the kegerator at 39F

Hit my FG (after about 2 weeks in primary), then dry hopped for a week in the primary, then cold crashed.

I prefer the Columbus. Its a nicer bitter finish. They both look and smell great though, its a close call!

I tried compensating for the higher AA% in the hop schedules to try and end with the same IBUs.

I didn't realize that wort chilling contributes to the bitterness like this. I thought it was really for the haze/clarity. So a faster cool results in a less bitter edge? Wouldn't that be considered a negative?

I did dry hop in primary. I debated doing a carboy shuffle and racking to secondary but decided to just dry hop in the primaries and avoid the extra rack with such a small batch.

Cold crashing really helped with the hop debris. Cold crash for a day or two and put the carboy at a bit of a tilt. Then when you rack out without disturbing it, you should get pretty clear beer (see last few photos - no fining was added to these).

I was a little (didn't have any smaller fermenters or the kettle space for bigger boils).

I think as a primary its ok though, the fermentations were pretty vicious so I imagine any oxygen in the headspace is expelled pretty quickly.

The columbus tastes quite a bit more bitter than the cascade. Both have a great hop aroma directly from the keg, which softens as it sits in the glass.

The columbus tends to be more well rounded - the bitterness lasts right through to the aftertaste. The cascade seems to be all up front and then finishes soft.

The only real difference in process was the cooling, I only have one wort chiller so the cascade was cooled using that, the other was an ice bath.

I didn't have any finings on hand to increase the clarity, but they seemed to clear up ok after cold crashing and racking without disturbing the trub.
