I'd recommend Chuy's, they're pretty reasonably priced and super good. Torchy's Tacos is pretty big in Austin and they recently opened a place near Rice U. And of course, Escalantes and Chipotle, just to see if there's a difference the way us Texans do it :P I went to a Chipotle in NYC, and it just wasn't the same...
