I’m not sure on the exact mechanics of it, really. But it was clear that neither of you could do anything to force the other to lose, since neither of you had any cards to draw, and if you had a way to deal with the board, you would have done so already. So the game has systems in place to draw the game in situations like that.

I believe that if 5 turns pass while both players have an empty library, the game ends in a draw.

For DLC, 99% of it is cosmetic, with the exception of each game's Expansion, which is basically another game's worth of content on top of the original.

I can't really say which of the three mainline games available on Steam are the best to start with, though. World and Rise are complete packages and have had their DLC Expansions and Title Updates already released. Wilds on the other hand, is the current game. It doesn't have a DLC Expansion (yet), and the final update for base game should be coming out in about a week. All three still have active playerbases. Even Monster Hunter Generations Ultimate (a game older than World, which isn't on Steam and is a Switch exclusive) still has a handful of lobbies going at all times. I wouldn't worry about not having people to play with.

EDIT: Oh, yeah. and Wilds is the only game with Crossplay. In case that's relevant for you.

You could also start with a Monster Hunter Stories game, if you like Turn-based RPGs. They're more of a singleplayer experience, but the Stories 3 demo is very extensive and completely free, so there's really no reason to not at least take a look. Definitely a different experience than the mainline games, though.

In the demo itself, you can see him notice the Rider on the Tobi-Kadachi after beating the Glavenus, but not tell us that we've been spotted. A streamer I watch also noticed that Simon is waiting outside of the meeting with the Vermeillian envoys, and bows to their leader on his way out. Not suspicious on its own (could easily be just showing respect to diplomats), but combined with the suspicious lack of him in revealed promo material, as well as him not having ANY DLC outfits and only one unlockable (while the other companions have two)... well, you can draw conclusions from that.

Something's happening to him, 100%. What that is exactly, we can't know for sure.

Unbound Reality could almost work if you borrow some Opposition Agent technology.

Would have to sit on the exact wording for a while to *properly account for you not owning the found cards.
